Ingredients:

  • 2 cups (180g) Old-Fashioned Rolled Oats
  • 1 cup (250g) Natural Creamy Peanut Butter
  • 0.5 cup (120ml) Pure Maple Syrup
  • 0.5 cup (85g) Mini Dark Chocolate Chips

Instructions:

  1. In a large mixing bowl, combine the peanut butter and maple syrup. Stir vigorously until the two have completely emulsified into a smooth, glossy paste. If the peanut butter is too stiff, microwave for 15 seconds to loosen the fats.
  2. Add the oats and mini dark chocolate chips to the bowl. Fold the mixture with a silicone spatula until every oat flake is thoroughly coated in the peanut butter mixture.
  3. Place the bowl in the refrigerator for 30 minutes. This allows the oats to hydrate and the oils to firm up, ensuring the balls maintain their shape.
  4. Using a 1-tablespoon cookie scoop, portion out the mixture. Squeeze the portion firmly in your palm to compress, then roll between your palms into a smooth sphere. Place on parchment paper.
