Ingredients:
- 2 cups (180g) Old-Fashioned Rolled Oats
- 1 cup (250g) Natural Creamy Peanut Butter
- 0.5 cup (120ml) Pure Maple Syrup
- 0.5 cup (85g) Mini Dark Chocolate Chips
Instructions:
- In a large mixing bowl, combine the peanut butter and maple syrup. Stir vigorously until the two have completely emulsified into a smooth, glossy paste. If the peanut butter is too stiff, microwave for 15 seconds to loosen the fats.
- Add the oats and mini dark chocolate chips to the bowl. Fold the mixture with a silicone spatula until every oat flake is thoroughly coated in the peanut butter mixture.
- Place the bowl in the refrigerator for 30 minutes. This allows the oats to hydrate and the oils to firm up, ensuring the balls maintain their shape.
- Using a 1-tablespoon cookie scoop, portion out the mixture. Squeeze the portion firmly in your palm to compress, then roll between your palms into a smooth sphere. Place on parchment paper.
