- 2 Tbsp Unsweetened Cocoa Powder (Dutch-process preferred)
- 1/4 tsp Baking Powder
- Pinch Fine Sea Salt
- 3 Tbsp Whole Milk
- 1 Tbsp Neutral Cooking Oil (or melted unsalted butter)
- 1/2 tsp Vanilla Extract
- 1 Tbsp Semi-Sweet Chocolate Chips (Optional, for lava center)
Instructions:
- Into your chosen microwave-safe mug, combine the flour, sugar, cocoa powder, baking powder, and salt.
- Use a fork or small whisk to combine the dry ingredients fully, ensuring no pockets of dry powder or clumps of cocoa powder remain at the bottom.
- Pour in the milk, oil (or melted butter), and vanilla extract.
- Mix carefully until just combined, creating a thick, smooth batter. Do not overmix, as this will lead to a rubbery cake.
- If using the optional lava center, drop the tablespoon of chocolate chips or a small square of chocolate directly onto the center of the batter. Do not stir them in.
- Place the mug into the microwave. Cook on High (100% power) for 60 to 90 seconds.
- Stop the microwave at 60 seconds and continue heating in short 10-second bursts until the center is set and the cake pulls slightly away from the edges of the mug.
- Carefully remove the hot mug and let the cake rest and cool for 1–2 minutes to allow the steam to redistribute and finish the cooking process.
