  • 2 Tbsp Unsweetened Cocoa Powder (Dutch-process preferred)
  • 1/4 tsp Baking Powder
  • Pinch Fine Sea Salt
  • 3 Tbsp Whole Milk
  • 1 Tbsp Neutral Cooking Oil (or melted unsalted butter)
  • 1/2 tsp Vanilla Extract
  • 1 Tbsp Semi-Sweet Chocolate Chips (Optional, for lava center)

Instructions:

  1. Into your chosen microwave-safe mug, combine the flour, sugar, cocoa powder, baking powder, and salt.
  2. Use a fork or small whisk to combine the dry ingredients fully, ensuring no pockets of dry powder or clumps of cocoa powder remain at the bottom.
  3. Pour in the milk, oil (or melted butter), and vanilla extract.
  4. Mix carefully until just combined, creating a thick, smooth batter. Do not overmix, as this will lead to a rubbery cake.
  5. If using the optional lava center, drop the tablespoon of chocolate chips or a small square of chocolate directly onto the center of the batter. Do not stir them in.
  6. Place the mug into the microwave. Cook on High (100% power) for 60 to 90 seconds.
  7. Stop the microwave at 60 seconds and continue heating in short 10-second bursts until the center is set and the cake pulls slightly away from the edges of the mug.
  8. Carefully remove the hot mug and let the cake rest and cool for 1–2 minutes to allow the steam to redistribute and finish the cooking process.
