Ingredients:
- 2.5 cups (280g) super-fine almond flour
- 1 tsp (5g) baking powder
- 0.5 tsp (3g) baking soda
- 0.25 tsp (1.5g) sea salt
- 1 tsp (2g) ground cinnamon
- 3 large eggs (150g)
- 0.5 cup (120ml) pure maple syrup
- 1 tsp (5ml) vanilla extract
- 2 cups (240g) grated zucchini, squeezed dry
- 1 tbsp (6g) lemon zest
- 2 tbsp (30ml) coconut oil, melted
- 2 tbsp (30ml) maple syrup
- 1 tsp (5ml) lemon juice
Instructions:
- Grate the zucchini using the fine holes of a box grater. Transfer the shreds to a clean kitchen towel and twist tightly, squeezing until no more liquid escapes to create a dry ball of zucchini.
- In a medium bowl, whisk the eggs, maple syrup, and vanilla extract vigorously until the mixture is pale and slightly frothy. Stir in the squeezed zucchini and lemon zest until evenly distributed.
- In a large bowl, sift together the almond flour, baking powder, baking soda, salt, and cinnamon. Gently fold the wet ingredients into the dry mixture using a silicone spatula, mixing only until no streaks of flour remain.
- Pour the batter into a parchment-lined 8x8 inch baking pan and bake for 45 minutes or until a toothpick comes out clean.
- For the glaze, whisk together melted coconut oil, maple syrup, and lemon juice, then drizzle over the cooled cake.
