Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) coconut sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (240g) full-fat sour cream
- 2 cups (300g) peeled and diced apples
- 1 tbsp (15g) all-purpose flour
- 3 tbsp (42g) unsalted butter
- ¼ cup (60ml) pure maple syrup
- 1 tbsp (15g) heavy cream
- 1 pinch (1g) sea salt
Instructions:
- Preheat oven to 350°F (175°C). Grease the Bundt pan with butter or baking spray, then dust with a mixture of flour and cinnamon, tapping out the excess.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a separate large bowl, cream the softened butter and coconut sugar until pale and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract until smooth.
- Alternate adding the dry ingredients and the sour cream into the butter mixture, starting and ending with the flour. Mix on low speed just until combined.
- Gently fold in the diced apples using a spatula until evenly distributed.
- Pour batter into the prepared pan and bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before inverting it onto a wire rack.
- In a small saucepan over medium heat, melt together the glaze butter, maple syrup, heavy cream, and sea salt until bubbling and thickened.
- Drizzle the warm glaze over the cake while it is still slightly warm.
