Ingredients:
- 3 large (450g) Granny Smith apples, peeled and sliced 1/2 inch thick
- 3 large (450g) Bartlett pears, peeled and sliced 1/2 inch thick
- 2 tbsp (30ml) fresh lemon juice
- 3 tbsp (45ml) pure maple syrup
- 1 tsp (2g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1 tbsp (8g) cornstarch or arrowroot powder
- 1/4 tsp (1.5g) sea salt
- 1 cup (90g) rolled oats
- 1/2 cup (60g) almond flour
- 1/4 cup (50g) coconut sugar or brown sugar
- 1/2 tsp (2g) ground cinnamon
- 1/4 cup (55g) melted coconut oil or unsalted butter
- 1/4 tsp (1.5g) sea salt
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, toss the sliced apples and pears with lemon juice, maple syrup, cinnamon, ginger, cornstarch, and salt. Transfer the mixture into a 9-inch baking dish or cast-iron skillet, spreading it evenly.
- In the same bowl, combine the rolled oats, almond flour, coconut sugar, cinnamon, and salt. Pour in the melted coconut oil or butter and stir until the mixture forms clumpy, pea-sized crumbs.
- Sprinkle the topping evenly over the fruit without pressing it down.
- Bake for 45 minutes until the topping is mahogany-colored and the fruit is bubbling.
