Ingredients:

  • 3 large (450g) Granny Smith apples, peeled and sliced 1/2 inch thick
  • 3 large (450g) Bartlett pears, peeled and sliced 1/2 inch thick
  • 2 tbsp (30ml) fresh lemon juice
  • 3 tbsp (45ml) pure maple syrup
  • 1 tsp (2g) ground cinnamon
  • 1/2 tsp (1g) ground ginger
  • 1 tbsp (8g) cornstarch or arrowroot powder
  • 1/4 tsp (1.5g) sea salt
  • 1 cup (90g) rolled oats
  • 1/2 cup (60g) almond flour
  • 1/4 cup (50g) coconut sugar or brown sugar
  • 1/2 tsp (2g) ground cinnamon
  • 1/4 cup (55g) melted coconut oil or unsalted butter
  • 1/4 tsp (1.5g) sea salt

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced apples and pears with lemon juice, maple syrup, cinnamon, ginger, cornstarch, and salt. Transfer the mixture into a 9-inch baking dish or cast-iron skillet, spreading it evenly.
  3. In the same bowl, combine the rolled oats, almond flour, coconut sugar, cinnamon, and salt. Pour in the melted coconut oil or butter and stir until the mixture forms clumpy, pea-sized crumbs.
  4. Sprinkle the topping evenly over the fruit without pressing it down.
  5. Bake for 45 minutes until the topping is mahogany-colored and the fruit is bubbling.
