Ingredients:
- 1 box (432g) spice cake mix
- 1/2 cup (120g) unsweetened applesauce
- 3 large eggs
- 1/2 cup (120g) low-fat Greek yogurt
- 1 tsp (5ml) vanilla extract
- 2 cups (300g) Granny Smith apples, peeled and finely diced
- 1 tsp (2g) ground cinnamon
- 1 tbsp (12g) maple syrup
- 1 tbsp (8g) all-purpose flour
Instructions:
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- In a small bowl, toss the diced apples with cinnamon, maple syrup, and flour until evenly coated.
- In a large mixing bowl, combine the spice cake mix, applesauce, eggs, Greek yogurt, and vanilla extract.
- Beat on medium speed for approximately 2 minutes until the batter is smooth and velvety.
- Gently fold the prepared apple mixture into the batter using a spatula, taking care not to overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30-35 minutes, or until the edges pull slightly away from the pan and the center springs back when touched.
