Ingredients:

  • 1 box (432g) spice cake mix
  • 1/2 cup (120g) unsweetened applesauce
  • 3 large eggs
  • 1/2 cup (120g) low-fat Greek yogurt
  • 1 tsp (5ml) vanilla extract
  • 2 cups (300g) Granny Smith apples, peeled and finely diced
  • 1 tsp (2g) ground cinnamon
  • 1 tbsp (12g) maple syrup
  • 1 tbsp (8g) all-purpose flour

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a small bowl, toss the diced apples with cinnamon, maple syrup, and flour until evenly coated.
  3. In a large mixing bowl, combine the spice cake mix, applesauce, eggs, Greek yogurt, and vanilla extract.
  4. Beat on medium speed for approximately 2 minutes until the batter is smooth and velvety.
  5. Gently fold the prepared apple mixture into the batter using a spatula, taking care not to overmix.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes, or until the edges pull slightly away from the pan and the center springs back when touched.
