Ingredients:
- 1 cup (120g) all-purpose flour, spooned and leveled
- 1 cup (160g) yellow cornmeal, preferably stone-ground
- 1/4 cup (50g) granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (240ml) buttermilk
- 1/4 cup (60ml) vegetable oil (or melted unsalted butter)
- 1 large egg
- 2 tablespoons honey
Instructions:
- Preheat the oven to 400°F (200°C). Grease a 9-inch cast iron skillet or baking pan with vegetable oil or shortening.
- In a large mixing bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, oil (or melted butter), egg, and honey until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix!
- Pour the batter into the prepared skillet or pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
