- 3 tbsp (37g) granulated sugar
- 2 tbsp (10g) unsweetened cocoa powder
- 1/2 tsp (3g) salt
- 3 tbsp (42g) unsalted butter, chilled and cubed
- 2 tbsp (30ml) grape juice
- 1/3 cup (80ml) warm water
- 2 cups (480ml) vegetable oil, for frying
- 16 oz (450g) whole milk ricotta cheese, drained overnight
- 1 cup (120g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1/2 cup (85g) mini semi-sweet chocolate chips
- 1/4 cup (30g) crushed pistachios
Instructions:
- Mix all-purpose flour, granulated sugar, cocoa powder, and salt in a bowl.
- Rub in the chilled, cubed unsalted butter using fingertips until the mixture resembles coarse crumbs.
- Stir in the grape juice and warm water until a stiff dough forms.
- Wrap the dough in plastic and chill in the refrigerator for 2 hours.
- On a lightly floured surface, roll the chilled dough until it is paper-thin, approximately 1/16 inch.
- Cut the dough into 4-inch circles.
- Wrap each circle tightly around a stainless steel cannoli tube.
- Heat vegetable oil in a heavy-bottomed pot to 350°F (180°C).
- Fry the shells for 1-2 minutes until they are deep golden brown and covered in tiny bubbles.
- Drain on paper towels and allow to cool completely before sliding the tubes out.
- Pass the drained ricotta cheese through a fine-mesh strainer or whisk vigorously until completely smooth.
- Fold in the powdered sugar and vanilla extract until the cream is fluffy and holds a peak.
- Gently stir in the mini semi-sweet chocolate chips.
- Transfer the filling to a pastry bag and pipe the mixture into both ends of the cooled shells.
- Dip the ends of the filled cannoli into crushed pistachios for garnish.
