Ingredients:

  • 1 (28-32 ounce) bag frozen tater tots, thawed slightly (800-900g)
  • 1 cup shredded cheddar cheese (100g)
  • 1/4 cup grated Parmesan cheese (25g)
  • 1/4 cup chopped fresh parsley (10g)
  • 1 teaspoon garlic powder (5g)
  • 1/2 teaspoon black pepper (2.5g)
  • 1 pound (450g) bacon, cut in half crosswise

Instructions:

  1. In a large bowl, mash the thawed tater tots with a fork or potato masher until broken down but not completely smooth.
  2. Add the cheddar cheese, Parmesan cheese, parsley, garlic powder, and black pepper (and cayenne, if using) to the mashed tater tots. Mix well until everything is evenly combined.
  3. Take a small amount of the tater tot mixture (about 1-2 tablespoons) and roll it into a ball.
  4. Wrap each tater tot ball with a half slice of bacon, overlapping the ends to secure it. Secure the bacon with a toothpick.
  5. Preheat oven to 400°F (200°C). Place the bacon-wrapped tater tot bombs on a baking sheet lined with parchment paper or a silicone mat.
  6. Bake for 20-25 minutes, or until the bacon is crispy and golden brown and the tater tot filling is heated through.
  7. Remove the toothpicks before serving. Serve warm with your favorite dipping sauce.
