Ingredients:
- 1 (28-32 ounce) bag frozen tater tots, thawed slightly (800-900g)
- 1 cup shredded cheddar cheese (100g)
- 1/4 cup grated Parmesan cheese (25g)
- 1/4 cup chopped fresh parsley (10g)
- 1 teaspoon garlic powder (5g)
- 1/2 teaspoon black pepper (2.5g)
- 1 pound (450g) bacon, cut in half crosswise
Instructions:
- In a large bowl, mash the thawed tater tots with a fork or potato masher until broken down but not completely smooth.
- Add the cheddar cheese, Parmesan cheese, parsley, garlic powder, and black pepper (and cayenne, if using) to the mashed tater tots. Mix well until everything is evenly combined.
- Take a small amount of the tater tot mixture (about 1-2 tablespoons) and roll it into a ball.
- Wrap each tater tot ball with a half slice of bacon, overlapping the ends to secure it. Secure the bacon with a toothpick.
- Preheat oven to 400°F (200°C). Place the bacon-wrapped tater tot bombs on a baking sheet lined with parchment paper or a silicone mat.
- Bake for 20-25 minutes, or until the bacon is crispy and golden brown and the tater tot filling is heated through.
- Remove the toothpicks before serving. Serve warm with your favorite dipping sauce.
