Ingredients:

  • 2 cups (480 ml) Mountain Dew or lemon-lime soda (for authentic taste, use Baja Blast soda if available)
  • 1 cup (240 ml) blue sports drink (like Gatorade Glacier Freeze or Powerade Mountain Blast)
  • Juice of 1 lime (about 2 tbsp / 30 ml)
  • 1 cup (240 ml) sparkling water or club soda
  • Ice cubes (as needed)
  • Lime wedges (for garnish)
  • Fresh mint leaves (optional, for garnish)
  • 8 oz (225 g) tortilla chips (thick-cut, sturdy)
  • 1 cup (100 g) shredded sharp cheddar cheese
  • 1 cup (100 g) shredded Monterey Jack cheese
  • 1/2 cup (120 g) cooked and seasoned ground beef or black beans for vegetarian
  • 1/4 cup (60 ml) Taco Bell-style green sauce or a mild green salsa
  • 1/2 cup (120 g) diced tomato
  • 1/4 cup (60 g) sliced jalapeños (fresh or pickled)
  • 1/4 cup (60 g) sliced black olives
  • 1/4 cup (60 g) chopped red onion
  • 1/4 cup (60 g) sour cream or Greek yogurt
  • 2 tbsp (30 ml) chopped fresh cilantro
  • 1 lime, cut into wedges (for squeezing)

Instructions:

  1. Combine soda and blue sports drink in a large pitcher.
  2. Add freshly squeezed lime juice and stir gently.
  3. Stir in sparkling water to add fizz and balance sweetness.
  4. Fill tall glasses with ice, pour the mocktail over, garnish with lime wedges and mint if using. Serve immediately.
  5. Preheat oven to 375°F (190°C).
  6. Spread tortilla chips evenly on a large baking tray or skillet.
  7. Sprinkle shredded cheddar and Monterey Jack cheeses evenly over chips.
  8. Evenly distribute cooked ground beef or black beans on top.
  9. Drizzle Taco Bell-style green sauce or salsa over the layered chips.
  10. Scatter diced tomatoes, jalapeños, olives, and red onion across the nachos.
  11. Bake in preheated oven for 8-10 minutes or until cheese is melted and bubbly.
  12. Remove from oven and dollop sour cream or Greek yogurt on top.
  13. Garnish with chopped cilantro and serve with lime wedges.
