Ingredients:

  • 10 oz (280 g) tortilla chips
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (100 g) shredded Monterey Jack cheese
  • 1/2 cup (75 g) sliced jalapeños (fresh or pickled)
  • 1/2 cup (120 g) black olives, sliced (optional)
  • 2 ripe avocados, diced
  • 1 medium tomato, diced
  • 1/4 cup (60 ml) red onion, finely chopped
  • 1/4 cup (15 g) fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a large baking sheet with parchment paper (optional).
  3. Spread tortilla chips evenly on the baking sheet.
  4. Layer cheddar and Monterey Jack cheese over the chips.
  5. Scatter jalapeños and black olives (if using) on top.
  6. Bake in the preheated oven for 10-15 minutes, or until cheese is melted and bubbling.
  7. In a mixing bowl, combine diced avocados, tomato, red onion, cilantro, lime juice, salt, and pepper.
  8. Remove nachos from the oven and let cool for a minute, then top with the Fresh Avocado Delight and serve immediately.
