Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup cherry jam (or preserves)
  • 2 tablespoons red sugar sprinkles (optional)

Instructions:

  1. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  2. In a separate bowl, cream the softened butter and sugar until light and fluffy (about 3-4 minutes).
  3. Add the egg and vanilla to the butter mixture, beating until combined.
  4. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  5. Divide dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disc to about ¼ inch thick.
  8. Use a cookie cutter to cut out rounds or desired shapes.
  9. Place half of the cookie shapes on the baking sheet.
  10. Add a small teaspoon of cherry jam to the center of each cookie.
  11. Position the remaining cookie shapes on top of the filled cookies and gently press the edges to seal.
  12. Sprinkle the tops with red sugar for added visual appeal.
  13. Bake in the preheated oven for 12-15 minutes or until lightly golden on the edges.
  14. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
