Ingredients:
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ cup cherry jam (or preserves)
- 2 tablespoons red sugar sprinkles (optional)
Instructions:
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a separate bowl, cream the softened butter and sugar until light and fluffy (about 3-4 minutes).
- Add the egg and vanilla to the butter mixture, beating until combined.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Divide dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- On a lightly floured surface, roll out one disc to about ¼ inch thick.
- Use a cookie cutter to cut out rounds or desired shapes.
- Place half of the cookie shapes on the baking sheet.
- Add a small teaspoon of cherry jam to the center of each cookie.
- Position the remaining cookie shapes on top of the filled cookies and gently press the edges to seal.
- Sprinkle the tops with red sugar for added visual appeal.
- Bake in the preheated oven for 12-15 minutes or until lightly golden on the edges.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
