Ingredients:

  • 4 (6-ounce) salmon fillets, skin-on or skinless (170g each)
  • 1 tablespoon olive oil (15ml)
  • Salt and black pepper, to taste
  • 1 cup fresh breadcrumbs (100g)
  • 1/2 cup grated Parmesan cheese (50g)
  • 1/4 cup fresh parsley, finely chopped (15g)
  • 2 tablespoons fresh dill, finely chopped (5g)
  • 2 tablespoons fresh chives, finely chopped (5g)
  • Zest of 1 lemon
  • 2 tablespoons Dijon mustard (30g)

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Place salmon fillets on a prepared baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and black pepper.
  3. In a mixing bowl, combine breadcrumbs, Parmesan, parsley, dill, chives, lemon zest, and Dijon mustard. Mix well until the ingredients are evenly distributed.
  4. Spoon the herb mixture generously over each salmon fillet, pressing down gently to adhere.
  5. Bake for approximately 15-20 minutes until the salmon flakes easily with a fork and the crust is golden brown. Optional: Broil for the last 2-3 minutes for extra crispiness.
  6. Remove from the oven and let rest for 5 minutes before serving.
