Ingredients:
- 4 (6-ounce) salmon fillets, skin-on or skinless (170g each)
- 1 tablespoon olive oil (15ml)
- Salt and black pepper, to taste
- 1 cup fresh breadcrumbs (100g)
- 1/2 cup grated Parmesan cheese (50g)
- 1/4 cup fresh parsley, finely chopped (15g)
- 2 tablespoons fresh dill, finely chopped (5g)
- 2 tablespoons fresh chives, finely chopped (5g)
- Zest of 1 lemon
- 2 tablespoons Dijon mustard (30g)
Instructions:
- Preheat oven to 400°F (200°C).
- Place salmon fillets on a prepared baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and black pepper.
- In a mixing bowl, combine breadcrumbs, Parmesan, parsley, dill, chives, lemon zest, and Dijon mustard. Mix well until the ingredients are evenly distributed.
- Spoon the herb mixture generously over each salmon fillet, pressing down gently to adhere.
- Bake for approximately 15-20 minutes until the salmon flakes easily with a fork and the crust is golden brown. Optional: Broil for the last 2-3 minutes for extra crispiness.
- Remove from the oven and let rest for 5 minutes before serving.
