Ingredients:

  • 1 cup (120 g) all-purpose flour
  • 1/2 cup (115 g) unsalted butter, softened
  • 1/3 cup (65 g) granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup (60 g) fruit jam (strawberry, raspberry, or apricot) or chocolate spread

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine flour, baking powder, and salt. Set aside.
  3. In another bowl, beat softened butter and sugar until light and fluffy.
  4. Incorporate the egg yolk and vanilla extract, mixing until combined.
  5. Gradually add dry ingredients to wet mixture, stirring until a dough forms.
  6. Scoop out tablespoon-sized portions of dough and roll into balls.
  7. Use your thumb or a spoon to create an indent in each ball.
  8. Spoon your chosen jam or chocolate spread into the center of each dimple.
  9. Arrange cookies on a baking sheet lined with parchment paper and bake for about 10 minutes, until edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
