Ingredients:
- 1 cup (120 g) all-purpose flour
- 1/2 cup (115 g) unsalted butter, softened
- 1/3 cup (65 g) granulated sugar
- 1 large egg yolk
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup (60 g) fruit jam (strawberry, raspberry, or apricot) or chocolate spread
Instructions:
- Preheat oven to 350°F (175°C).
- In a bowl, combine flour, baking powder, and salt. Set aside.
- In another bowl, beat softened butter and sugar until light and fluffy.
- Incorporate the egg yolk and vanilla extract, mixing until combined.
- Gradually add dry ingredients to wet mixture, stirring until a dough forms.
- Scoop out tablespoon-sized portions of dough and roll into balls.
- Use your thumb or a spoon to create an indent in each ball.
- Spoon your chosen jam or chocolate spread into the center of each dimple.
- Arrange cookies on a baking sheet lined with parchment paper and bake for about 10 minutes, until edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
