Ingredients:

  • 1 ½ cups (190 g) all-purpose flour
  • 1 tsp (5 g) baking powder
  • ½ tsp (2 g) baking soda
  • ¼ tsp (1 g) salt
  • ½ cup (115 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 2 tsp (10 ml) vanilla extract
  • ½ cup (120 ml) milk
  • ½ cup (70 g) Skittles, roughly chopped
  • 1 cup (230 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar
  • ¼ cup (60 ml) heavy cream
  • 1 tsp (5 ml) vanilla extract
  • Food coloring (red, orange, yellow, green, blue, purple)
  • Extra Skittles, for garnish

Instructions:

  1. Preheat the Oven: Set the oven to 350°F (175°C).
  2. Prepare the Muffin Tin: Line the muffin tin with cupcake liners.
  3. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream Butter and Sugar: In a separate bowl, beat softened butter and granulated sugar until light and fluffy.
  5. Add Eggs and Vanilla: Incorporate eggs, one at a time, and mix in vanilla extract.
  6. Combine Mixtures: Gradually alternate adding dry ingredients and milk to the wet mixture until just combined.
  7. Fold in Skittles: Gently fold in chopped Skittles.
  8. Fill Muffin Tins: Spoon batter into prepared liners, filling each about 2/3 full.
  9. Bake: Place in the oven and bake for 15-20 minutes or until a toothpick inserted comes out clean.
  10. Cool: Remove from oven and let cool completely on a wire rack.
  11. Prepare Frosting: In a bowl, beat butter, powdered sugar, heavy cream, and vanilla until fluffy. Divide into separate bowls and tint each with food coloring.
  12. Frost Cupcakes: Use piping bags to frost each cupcake with different colored frostings. Garnish with whole Skittles.
