- 1 ½ cups (190 g) all-purpose flour

- 1 cup (200 g) granulated sugar

- 2 tsp (10 ml) vanilla extract
- ½ cup (120 ml) milk
- ½ cup (70 g) Skittles, roughly chopped
- 1 cup (230 g) unsalted butter, softened
- 4 cups (480 g) powdered sugar
- ¼ cup (60 ml) heavy cream
- 1 tsp (5 ml) vanilla extract
- Food coloring (red, orange, yellow, green, blue, purple)
- Extra Skittles, for garnish
Instructions:
- Preheat the Oven: Set the oven to 350°F (175°C).
- Prepare the Muffin Tin: Line the muffin tin with cupcake liners.
- Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar: In a separate bowl, beat softened butter and granulated sugar until light and fluffy.
- Add Eggs and Vanilla: Incorporate eggs, one at a time, and mix in vanilla extract.
- Combine Mixtures: Gradually alternate adding dry ingredients and milk to the wet mixture until just combined.
- Fold in Skittles: Gently fold in chopped Skittles.
- Fill Muffin Tins: Spoon batter into prepared liners, filling each about 2/3 full.
- Bake: Place in the oven and bake for 15-20 minutes or until a toothpick inserted comes out clean.
- Cool: Remove from oven and let cool completely on a wire rack.
- Prepare Frosting: In a bowl, beat butter, powdered sugar, heavy cream, and vanilla until fluffy. Divide into separate bowls and tint each with food coloring.
- Frost Cupcakes: Use piping bags to frost each cupcake with different colored frostings. Garnish with whole Skittles.
