Ingredients:

  • 4 medium Granny Smith or Honeycrisp apples
  • 4 firm Bosc or Anjou pears
  • 1 tbsp lemon juice
  • 1/2 cup unsalted butter, melted
  • 1/2 cup light brown sugar, packed
  • 1 tbsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup rolled oats
  • 1/4 cup chopped walnuts or pecans
  • 2 tbsp cold butter, cubed

Instructions:

  1. Carefully core the apples and pears, removing the seeds and tough center membranes but leaving the bottom intact to create a bowl. Toss the hollowed fruits in lemon juice and place them upright in a 9x13 inch baking dish.
  2. In a small bowl, whisk together the melted butter, brown sugar, cinnamon, vanilla, and salt until the mixture is a smooth paste. Spoon this mixture evenly into the center of each apple and pear, pressing down slightly.
  3. Preheat the oven to 350°F (175°C). Sprinkle the rolled oats and chopped walnuts or pecans over the tops of the fruit and dot with cold butter cubes.
  4. Bake for 60 minutes. Every 20 minutes, use a spoon to baste the fruit with the bubbling syrup from the bottom of the pan. Remove when the fruit is tender and the edges are a deep golden brown.
