Ingredients:

  • 1 pound (450g) broccoli florets, cut into small pieces (about 2 cups)
  • 1 tablespoon (15ml) olive oil
  • 1/2 cup (60g) finely chopped yellow onion
  • 1 clove garlic, minced
  • 1 large egg
  • 1/2 cup (60g) shredded sharp cheddar cheese
  • 1/4 cup (30g) grated Parmesan cheese
  • 1/4 cup (30g) all-purpose flour (plus extra for dusting)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of cayenne pepper (optional)

Instructions:

  1. Steam the broccoli florets until bright green and tender-crisp. Alternatively, quickly blanch in boiling water for 3 minutes, then drain and shock in ice water. Drain well.
  2. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. In a large mixing bowl, combine the cooked broccoli, sautéed onion and garlic mixture, egg, cheddar cheese, Parmesan cheese, flour, salt, pepper, and cayenne pepper (if using). Mix well.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat. Form the broccoli mixture into small oval shapes (about 1-inch long).
  5. Arrange the bliss bites on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown and crispy on the edges, flipping halfway through.
  6. Let the bliss bites cool slightly on the baking sheet before serving.
