Ingredients:
- 1 pound (450g) broccoli florets, cut into small pieces (about 2 cups)
- 1 tablespoon (15ml) olive oil
- 1/2 cup (60g) finely chopped yellow onion
- 1 clove garlic, minced
- 1 large egg
- 1/2 cup (60g) shredded sharp cheddar cheese
- 1/4 cup (30g) grated Parmesan cheese
- 1/4 cup (30g) all-purpose flour (plus extra for dusting)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of cayenne pepper (optional)
Instructions:
- Steam the broccoli florets until bright green and tender-crisp. Alternatively, quickly blanch in boiling water for 3 minutes, then drain and shock in ice water. Drain well.
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- In a large mixing bowl, combine the cooked broccoli, sautéed onion and garlic mixture, egg, cheddar cheese, Parmesan cheese, flour, salt, pepper, and cayenne pepper (if using). Mix well.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat. Form the broccoli mixture into small oval shapes (about 1-inch long).
- Arrange the bliss bites on the prepared baking sheet. Bake for 20-25 minutes, or until golden brown and crispy on the edges, flipping halfway through.
- Let the bliss bites cool slightly on the baking sheet before serving.
