Ingredients:

  • 1 lb fresh figs, stems trimmed
  • 1 tbsp melted unsalted butter
  • 4 oz goat cheese, softened
  • 1/4 cup chopped walnuts
  • 1 tbsp fresh thyme leaves
  • 3 tbsp honey
  • 1 tbsp balsamic glaze
  • 1/4 tsp flaky sea salt

Instructions:

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Slice each fig lengthwise, cutting about 3/4 of the way through to create a pocket, or slice completely in half.
  3. Arrange figs cut-side up on the baking sheet and lightly brush the bottoms with melted butter.
  4. Spoon approximately 1 teaspoon of softened goat cheese into the center of each fig, pressing gently to secure it.
  5. Top each fig with a piece of chopped walnut and a pinch of fresh thyme.
  6. Drizzle the honey and balsamic glaze evenly over the top of each fruit.
  7. Bake for 15–20 minutes until the honey is simmering and the edges of the figs turn a deep mahogany-color.
  8. Remove from the oven and immediately sprinkle with flaky sea salt while the glaze is still tacky.
