Ingredients:

  • 2 tbsp (30 ml) unsalted butter, melted
  • 2 tbsp (30 ml) extra-virgin olive oil
  • 2 tbsp (30 ml) freshly squeezed lemon juice
  • 1 tsp (5 g) freshly minced garlic
  • 1 tsp (5 g) honey
  • 1 tsp (5 g) sweet paprika
  • 1 tsp (5 g) dried oregano
  • 1 tsp sea salt flakes
  • ½ tsp cracked black pepper, plus extra to serve
  • ½ tsp chili (red pepper) flakes (optional)
  • 4 skin-on salmon fillets (about 6 oz or 170 g each)

Instructions:

  1. Preheat the oven to 220°C (425°F) and allow it to heat for at least 20 minutes.
  2. In a mixing bowl, combine melted butter, olive oil, lemon juice, minced garlic, honey, paprika, oregano, salt, cracked black pepper, and chili flakes (if using).
  3. Place salmon skin-side down in a roasting tin and spoon the lemon garlic butter mixture over the salmon.
  4. Bake in the preheated oven for 12 minutes, then switch the oven grill (broiler) to high and cook for an additional 3 minutes or until caramelized and flaky.
  5. Plate the salmon with sides of mashed potatoes, steamed greens or salad, garnishing with extra pepper, lemon slices, and parsley.
