Ingredients:
- 2 tbsp (30 ml) unsalted butter, melted
- 2 tbsp (30 ml) extra-virgin olive oil
- 2 tbsp (30 ml) freshly squeezed lemon juice
- 1 tsp (5 g) freshly minced garlic
- 1 tsp (5 g) honey
- 1 tsp (5 g) sweet paprika
- 1 tsp (5 g) dried oregano
- 1 tsp sea salt flakes
- ½ tsp cracked black pepper, plus extra to serve
- ½ tsp chili (red pepper) flakes (optional)
- 4 skin-on salmon fillets (about 6 oz or 170 g each)
Instructions:
- Preheat the oven to 220°C (425°F) and allow it to heat for at least 20 minutes.
- In a mixing bowl, combine melted butter, olive oil, lemon juice, minced garlic, honey, paprika, oregano, salt, cracked black pepper, and chili flakes (if using).
- Place salmon skin-side down in a roasting tin and spoon the lemon garlic butter mixture over the salmon.
- Bake in the preheated oven for 12 minutes, then switch the oven grill (broiler) to high and cook for an additional 3 minutes or until caramelized and flaky.
- Plate the salmon with sides of mashed potatoes, steamed greens or salad, garnishing with extra pepper, lemon slices, and parsley.
