Ingredients:

  • 4 large fresh peaches, halved and pitted (approx. 2 lbs / 900g)
  • 2 tbsp (30g) unsalted butter, melted
  • 1 tsp (2g) ground cinnamon
  • 1/4 tsp (1g) ground ginger
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (100g) rolled oats
  • 1/3 cup (65g) dark brown sugar, packed
  • 4 tbsp (57g) cold unsalted butter, cubed
  • 1/4 tsp (1g) salt
  • 1 tbsp (15ml) pure vanilla extract

Instructions:

  1. Preheat your oven to 375°F (190°C). Place the peach halves cut-side up in an 8x8 inch baking dish.
  2. In a small bowl, whisk together the melted butter, cinnamon, and ginger. Brush this mixture generously into the center of each peach cavity.
  3. In a separate bowl, combine the flour, oats, brown sugar, and salt. Use a fork or fingertips to work the cold cubed butter into the dry ingredients until the mixture resembles coarse wet sand with a few pea-sized lumps.
  4. Stir the vanilla extract into the crumble mixture.
  5. Mound the crumble mixture into the center of each peach half, pressing down lightly to secure it.
  6. Bake uncovered for 25-30 minutes until the fruit is tender and the topping has reached a deep mahogany-gold color.
