Ingredients:

  • 4 large peaches (approx. 2 lbs), halved and pitted
  • 4 tbsp unsalted butter, cut into small cubes
  • 1/4 cup light brown sugar, packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 pint vanilla ice cream

Instructions:

  1. Preheat your oven to 375°F (190°C). Carefully slice the peaches in half and remove the pits. Place the peach halves cut-side up in a 9x13 inch baking dish, ensuring they are snug but not overlapping.
  2. In a small bowl, whisk together the brown sugar, cinnamon, and salt. Place one cube of butter into the hollow of each peach half, then generously sprinkle the cinnamon-sugar mixture over the butter.
  3. Slide the dish into the center rack of the oven. Bake for 15 to 20 minutes until the butter is bubbling rapidly, the sugar has turned into a deep golden syrup, and the peaches are tender when pierced with a fork.
  4. Transfer a warm peach half to a serving bowl. Place one large scoop of vanilla ice cream directly into the center of the peach and drizzle 1–2 tablespoons of the pan syrup from the baking dish over the ice cream.
