Ingredients:
- 8 oz (225g) wheel of Brie cheese
- 2 medium (300g) firm-ripe Bosc or Anjou pears, thinly sliced
- 3 tbsp (60ml) honey
- 1/2 tsp (1g) ground cinnamon
- 1/4 tsp (1g) salt
- 1/4 cup (30g) chopped walnuts
- 1 tsp (1g) fresh thyme leaves
- 1/4 cup (35g) dried cranberries
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or grease a small ceramic dish. Note: High heat is needed for the honey to bubble.
- Place the 8 oz Brie wheel in the center of your dish. Use a knife to lightly score the top rind in a crosshatch pattern.
- In a small bowl, toss the sliced pears with honey, cinnamon, and salt. Mix until every slice is glossy and coated.
- Arrange the pear slices in an overlapping circle on top of the Brie.
- Sprinkle the chopped walnuts and dried cranberries over the pears.
- Bake for 15-20 minutes until the pears are mahogany colored and the cheese bulges at the sides.
- Remove from the oven and immediately sprinkle with fresh thyme leaves.
- Let the dish rest for 5 minutes. Note: This lets the cheese thicken slightly so it doesn't pour out immediately.
