Ingredients:

  • 2 large overripe bananas
  • 2 cups old-fashioned rolled oats
  • 0.75 cup dark chocolate chips
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon fine sea salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, mash the overripe bananas with a fork or potato masher until liquid and smooth with no large lumps.
  3. Stir in the melted butter (or coconut oil) and vanilla extract until well combined.
  4. Add the rolled oats, all-purpose flour, cinnamon, baking soda, and sea salt. Stir with a silicone spatula until a thick dough forms.
  5. Fold in the dark chocolate chips evenly throughout the batter.
  6. Critical Step: Allow the batter to rest for 10 minutes. This allows the oats to hydrate and ensures the cookies don't spread too thin.
  7. Using a 1.5 tablespoon cookie scoop, drop portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 12 minutes or until the edges are golden brown and the centers are set. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
