Ingredients:
- 2 large overripe bananas
- 2 cups old-fashioned rolled oats
- 0.75 cup dark chocolate chips
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- 0.5 teaspoon baking soda
- 0.5 teaspoon fine sea salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone mat.
- In a large mixing bowl, mash the overripe bananas with a fork or potato masher until liquid and smooth with no large lumps.
- Stir in the melted butter (or coconut oil) and vanilla extract until well combined.
- Add the rolled oats, all-purpose flour, cinnamon, baking soda, and sea salt. Stir with a silicone spatula until a thick dough forms.
- Fold in the dark chocolate chips evenly throughout the batter.
- Critical Step: Allow the batter to rest for 10 minutes. This allows the oats to hydrate and ensures the cookies don't spread too thin.
- Using a 1.5 tablespoon cookie scoop, drop portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 12 minutes or until the edges are golden brown and the centers are set. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
