Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tsp (2g) ground cinnamon
- ½ cup (115g) unsalted butter, melted and cooled
- 1 cup (200g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 1 cup (225g) mashed overripe banana
- 1 ½ cups (225g) grated zucchini
- ½ cup (60g) chopped walnuts
- 8 oz (225g) cream cheese, softened
- ¼ cup (55g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 2 tbsp (30ml) heavy cream
Instructions:
- Preheat oven to 350°F (175°C) and grease a 10-inch Bundt pan with butter or non-stick spray.
- In a large bowl, whisk together melted butter and sugar. Beat in eggs one at a time, then stir in vanilla and mashed bananas.
- In a separate small bowl, whisk flour, baking soda, salt, and cinnamon; fold the dry ingredients into the wet mixture until just combined.
- Gently fold in the grated zucchini and chopped walnuts using a spatula until evenly distributed.
- Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Prepare the glaze by beating softened cream cheese and butter, then mixing in powdered sugar, vanilla, and heavy cream until smooth. Apply to the cooled cake.
