Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking soda
  • ½ tsp (3g) salt
  • 1 tsp (2g) ground cinnamon
  • ½ cup (115g) unsalted butter, melted and cooled
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp (5ml) vanilla extract
  • 1 cup (225g) mashed overripe banana
  • 1 ½ cups (225g) grated zucchini
  • ½ cup (60g) chopped walnuts
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (55g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30ml) heavy cream

Instructions:

  1. Preheat oven to 350°F (175°C) and grease a 10-inch Bundt pan with butter or non-stick spray.
  2. In a large bowl, whisk together melted butter and sugar. Beat in eggs one at a time, then stir in vanilla and mashed bananas.
  3. In a separate small bowl, whisk flour, baking soda, salt, and cinnamon; fold the dry ingredients into the wet mixture until just combined.
  4. Gently fold in the grated zucchini and chopped walnuts using a spatula until evenly distributed.
  5. Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Prepare the glaze by beating softened cream cheese and butter, then mixing in powdered sugar, vanilla, and heavy cream until smooth. Apply to the cooled cake.
