  • 1 red bell pepper, diced (approx. 1 cup/150g)
  • 1 jalapeno pepper, seeded and minced (optional)
  • 1 (12 oz/355ml) bottle of dark ale (stout or porter)
  • 1 (28 oz/794g) can crushed tomatoes
  • 1 (15 oz/425g) can kidney beans, rinsed and drained
  • 1 (15 oz/425g) can black beans, rinsed and drained
  • 1 cup (240ml) beef broth (low-sodium)
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 2.5 lbs (1134g) Yukon Gold potatoes, peeled and cubed (optional)
  • 1/2 cup (120ml) milk (optional)
  • 4 tbsp (57g) unsalted butter (optional)
  • Salt and freshly ground white pepper, to taste (optional)
  • Shredded cheddar cheese (optional)
  • Sour cream (optional)
  • Chopped green onions (scallions) (optional)

Instructions:

  1. Crumble the sausage and brown it in the Dutch oven with olive oil over medium-high heat. Drain off any excess grease.
  2. Add onion, garlic, bell pepper, and jalapeno (if using) to the pot. Sauté until softened, about 5-7 minutes.
  3. Stir in chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using). Cook for 1 minute, stirring constantly, until fragrant.
  4. Pour in the dark ale, scraping up any browned bits from the bottom of the pot. Allow to simmer for a few minutes to reduce slightly.
  5. Stir in the crushed tomatoes, kidney beans, black beans, and beef broth. Bring to a simmer.
  6. Reduce heat to low, cover, and simmer for at least 1 hour, or up to 1.5 hours, stirring occasionally. This allows the flavors to meld and deepen.
  7. While the chili simmers, boil the potatoes until tender. Drain and mash with milk and butter until smooth and creamy. Season with salt and white pepper to taste. (Optional)
  8. Taste the chili and adjust seasoning with salt and pepper as needed.
  9. Ladle the chili into bowls. Top with mashed potatoes (if desired), shredded cheddar cheese, sour cream, and chopped green onions. This chili recipe unique appeals to readers and search engines
