- 2.5 lbs (1134g) Yukon Gold potatoes, peeled and cubed (optional)

- Crumble the sausage and brown it in the Dutch oven with olive oil over medium-high heat. Drain off any excess grease.
- Add onion, garlic, bell pepper, and jalapeno (if using) to the pot. Sauté until softened, about 5-7 minutes.
