Ingredients:

  • 1 pound (450g) bulk pork sausage, spicy or mild
  • 8 ounces (225g) sharp cheddar cheese, shredded
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup (1 stick/113g) unsalted butter, cold and cut into small cubes
  • ½ cup (120ml) milk, whole or 2%
  • 2 tablespoons chopped fresh chives or green onions (optional)

Instructions:

  1. Preheat oven to 375°F (190°C, Gas Mark 5). Line a baking sheet with parchment paper.
  2. Grate the cheddar cheese and set aside. In a large bowl, whisk together flour, baking powder, salt, and pepper.
  3. Cut the cold butter into the flour mixture using a pastry blender (or your fingertips) until the mixture resembles coarse crumbs.
  4. Add the shredded cheddar cheese and milk to the flour mixture. Stir until just combined. Do not overmix.
  5. Add the sausage to the dough and gently mix until evenly distributed.
  6. Cover the bowl and chill in the refrigerator for at least 30 minutes.
  7. Using a cookie scoop or spoon, form the mixture into 1-inch balls. Place them on the prepared baking sheet.
  8. Bake for 20-25 minutes, or until golden brown and cooked through. Let cool slightly before serving. This recipe makes delicious Sausage Balls.
