Ingredients:
- 1 pound (450g) bulk pork sausage, spicy or mild
- 8 ounces (225g) sharp cheddar cheese, shredded
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup (1 stick/113g) unsalted butter, cold and cut into small cubes
- ½ cup (120ml) milk, whole or 2%
- 2 tablespoons chopped fresh chives or green onions (optional)
Instructions:
- Preheat oven to 375°F (190°C, Gas Mark 5). Line a baking sheet with parchment paper.
- Grate the cheddar cheese and set aside. In a large bowl, whisk together flour, baking powder, salt, and pepper.
- Cut the cold butter into the flour mixture using a pastry blender (or your fingertips) until the mixture resembles coarse crumbs.
- Add the shredded cheddar cheese and milk to the flour mixture. Stir until just combined. Do not overmix.
- Add the sausage to the dough and gently mix until evenly distributed.
- Cover the bowl and chill in the refrigerator for at least 30 minutes.
- Using a cookie scoop or spoon, form the mixture into 1-inch balls. Place them on the prepared baking sheet.
- Bake for 20-25 minutes, or until golden brown and cooked through. Let cool slightly before serving. This recipe makes delicious Sausage Balls.
