Ingredients:
- 2 ½ cups (300g) all-purpose flour, plus more for dusting
- 1 teaspoon (5g) salt
- 1 cup (226g) unsalted butter, very cold and cut into cubes
- ½ cup (120ml) ice water
- 1 large egg, beaten (for egg wash)
- 1 tablespoon (15ml) milk (for egg wash)
- 2 cups (300g) fresh or frozen blueberries (if frozen, do not thaw)
- ¼ cup (50g) granulated sugar
- 2 tablespoons (30ml) lemon juice
- 1 tablespoon (7g) cornstarch
- 1 ½ cups (180g) powdered sugar
- 3-4 tablespoons (45-60ml) milk or water
- Optional: Sprinkles for decoration
Instructions:
- Make the Dough: Combine flour and salt. Cut in the cold butter until crumbly. Gradually add ice water until the dough comes together. Form into a disc, wrap, and chill.
- Prepare the Blueberry Filling: In a saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring constantly, until thickened and bubbly. Let cool completely.
- Assemble the Pop Tarts: Roll out the chilled dough on a lightly floured surface. Cut into rectangles.
- Fill and Seal: Place a spoonful of blueberry filling onto half of the rectangles. Top with the remaining rectangles. Crimp the edges with a fork to seal. These homemade blueberry pop tarts are delicious!
- Egg Wash and Bake: Brush the tops with egg wash. Use a fork to poke holes in the top of each pop tart (to release steam). Bake until golden brown.
- Cool and Ice: Let the pop tarts cool completely on a wire rack.
- Make the Icing: Whisk together powdered sugar and milk/water until smooth.
- Ice and Decorate: Spread the icing over the cooled pop tarts. Decorate with sprinkles, if desired.
