Ingredients:

  • 1 cup coconut milk (full-fat or light)
  • 1 cup mixed berries (strawberries, raspberries, and blueberries), fresh or frozen
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon matcha green tea powder
  • 1 cup hot water (about 175°F or 80°C)
  • 1 tablespoon honey or agave syrup (optional)

Instructions:

  1. In a blender, combine coconut milk, mixed berries, and honey. Blend until smooth and vibrant in color. Chill in the refrigerator for about 30 minutes.
  2. In a small bowl, whisk the matcha powder with hot water until completely dissolved and no lumps remain. Add honey or agave syrup, whisking until well blended.
  3. In serving glasses, pour the chilled pink berry mixture halfway. Carefully layer the matcha mixture on top. Garnish with extra berries or a dusting of matcha.
