Ingredients:
- 1 cup coconut milk (full-fat or light)
- 1 cup mixed berries (strawberries, raspberries, and blueberries), fresh or frozen
- 2 tablespoons honey or maple syrup
- 1 tablespoon matcha green tea powder
- 1 cup hot water (about 175°F or 80°C)
- 1 tablespoon honey or agave syrup (optional)
Instructions:
- In a blender, combine coconut milk, mixed berries, and honey. Blend until smooth and vibrant in color. Chill in the refrigerator for about 30 minutes.
- In a small bowl, whisk the matcha powder with hot water until completely dissolved and no lumps remain. Add honey or agave syrup, whisking until well blended.
- In serving glasses, pour the chilled pink berry mixture halfway. Carefully layer the matcha mixture on top. Garnish with extra berries or a dusting of matcha.
