Ingredients:

  • 1 pound fresh radishes, trimmed and halved
  • 2 tablespoons olive oil or unsalted butter
  • 2 cloves garlic, minced
  • ¼ cup heavy cream or full-fat coconut milk
  • Salt and pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions:

  1. Trim the tops and bottoms and halve the radishes.
  2. In a large pot, bring water to a boil. Add radishes and boil for 10-12 minutes until tender.
  3. Drain radishes in a colander and let steam for a minute to dry.
  4. In the same pot, heat olive oil or butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Return drained radishes to the pot. Add heavy cream, salt, and pepper. Mash until creamy, adjusting the consistency with more cream as needed.
  6. Stir in chopped parsley, if using. Adjust seasoning and serve warm.
