Ingredients:
- 1 pound fresh radishes, trimmed and halved
- 2 tablespoons olive oil or unsalted butter
- 2 cloves garlic, minced
- ¼ cup heavy cream or full-fat coconut milk
- Salt and pepper, to taste
- 2 tablespoons fresh parsley, chopped (optional)
Instructions:
- Trim the tops and bottoms and halve the radishes.
- In a large pot, bring water to a boil. Add radishes and boil for 10-12 minutes until tender.
- Drain radishes in a colander and let steam for a minute to dry.
- In the same pot, heat olive oil or butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Return drained radishes to the pot. Add heavy cream, salt, and pepper. Mash until creamy, adjusting the consistency with more cream as needed.
- Stir in chopped parsley, if using. Adjust seasoning and serve warm.
