Ingredients:

  • 2 cups (180g) Old Fashioned Rolled Oats
  • 1/2 cup (60g) Oat Flour
  • 1/4 cup (30g) Ground Flaxseed Meal
  • 2 large (200g) Overripe Bananas
  • 1/2 cup (128g) Creamy Peanut Butter
  • 2 tbsp (30ml) Pure Maple Syrup
  • 1 tsp Cinnamon
  • 1/2 tsp Sea Salt
  • 1/3 cup (50g) Dark Chocolate Chips

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. Mash the 2 large overripe bananas in a large mixing bowl until they are a liquid consistency with very few lumps.
  3. Stir in the 1/2 cup creamy peanut butter and 2 tbsp maple syrup until the mixture is velvety and fully combined.
  4. Whisk in the 1/4 cup flaxseed meal and 1 tsp cinnamon until no dry clumps remain.
  5. Fold in the 2 cups old fashioned oats and 1/2 cup oat flour until all the dry bits are moistened.
  6. Add the 1/2 tsp sea salt and 1/3 cup dark chocolate chips until they are evenly distributed throughout the dough.
  7. Scoop the dough using a 2 tablespoon scoop and place them on the prepared sheet, spacing them 2 inches apart.
  8. Flatten each dough ball slightly with your palm or a fork until they are about 1/2 inch thick.
  9. Bake for 15 minutes until the edges feel set and the tops are matte rather than shiny.
  10. Cool on the baking sheet for at least 10 minutes until they are firm enough to lift without breaking.
