Ingredients:
- 1/2 cup (115g) unsalted butter
- 2 tbsp (30ml) maple syrup
- 1 1/2 cups (190g) all-purpose flour
- 1 tsp (5g) baking powder
- 1/4 tsp (1.5g) salt
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120ml) sour cream
- 3 medium pears, thinly sliced
- 2 tbsp (30g) melted brown butter
- 2 tbsp (25g) turbinado sugar
Instructions:
- Place the butter in a light-colored skillet over medium heat. Melt and stir constantly until the butter foams, crackles, and turns golden-brown with a nutty aroma.
- Remove butter from heat immediately, stir in the maple syrup, and let cool for 10 minutes.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the cooled brown butter and granulated sugar until pale and fluffy (about 2-3 minutes).
- Add eggs one at a time, then stir in the vanilla extract, mixing on medium speed until combined.
- Alternately stir in the dry ingredients and the sour cream, stopping as soon as the flour is incorporated to maintain tenderness.
- Grease a 9-inch springform pan and line the bottom with parchment paper.
- Brush the bottom of the pan with reserved melted brown butter, arrange pear slices on the bottom, and sprinkle with turbinado sugar.
- Pour the batter over the pears, smooth the top, and bake for 35 minutes or until a toothpick comes out clean.
- Let the cake cool in the pan for 20 minutes before inverting to release.
