Ingredients:

  • 1/2 cup (115g) unsalted butter
  • 2 tbsp (30ml) maple syrup
  • 1 1/2 cups (190g) all-purpose flour
  • 1 tsp (5g) baking powder
  • 1/4 tsp (1.5g) salt
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1/2 cup (120ml) sour cream
  • 3 medium pears, thinly sliced
  • 2 tbsp (30g) melted brown butter
  • 2 tbsp (25g) turbinado sugar

Instructions:

  1. Place the butter in a light-colored skillet over medium heat. Melt and stir constantly until the butter foams, crackles, and turns golden-brown with a nutty aroma.
  2. Remove butter from heat immediately, stir in the maple syrup, and let cool for 10 minutes.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, beat the cooled brown butter and granulated sugar until pale and fluffy (about 2-3 minutes).
  5. Add eggs one at a time, then stir in the vanilla extract, mixing on medium speed until combined.
  6. Alternately stir in the dry ingredients and the sour cream, stopping as soon as the flour is incorporated to maintain tenderness.
  7. Grease a 9-inch springform pan and line the bottom with parchment paper.
  8. Brush the bottom of the pan with reserved melted brown butter, arrange pear slices on the bottom, and sprinkle with turbinado sugar.
  9. Pour the batter over the pears, smooth the top, and bake for 35 minutes or until a toothpick comes out clean.
  10. Let the cake cool in the pan for 20 minutes before inverting to release.
