Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) packed light brown sugar
- ½ cup (100g) granulated sugar
- 3 large eggs, room temperature
- 1 tsp (5ml) vanilla extract
- 2 ½ cups (315g) all-purpose flour
- 1 tsp (5g) baking powder
- ½ tsp (3g) baking soda
- 1 tsp (2g) ground cinnamon
- ½ tsp (1g) salt
- 1 cup (240ml) buttermilk, room temperature
- 3 cups (approx. 450g) Granny Smith apples, peeled and diced into ½ inch cubes
- 2 tbsp (28g) unsalted butter
- ¼ cup (50g) brown sugar
- 2 tbsp (30ml) heavy cream
- Pinch of salt
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform or cake pan and line the bottom with parchment paper.
- Peel, core, and dice the Granny Smith apples into 1/2 inch cubes and set aside.
- In a large bowl, beat the softened butter and both sugars on medium-high speed until the mixture is light, fluffy, and pale (approximately 3 minutes).
- Add eggs one at a time, beating well after each addition, then stir in the vanilla extract.
- In a separate medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- Lower the mixer speed and add the dry ingredients in three parts, alternating with the buttermilk (dry-wet-dry-wet-dry). Mix only until combined to avoid overworking the batter.
- Gently fold the diced apples into the batter using a spatula.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire cooling rack.
- Prepare the glaze by melting 2 tbsp butter in a small saucepan, then stirring in brown sugar, heavy cream, and a pinch of salt until smooth.
- Drizzle the warm brown sugar glaze over the cooled cake before slicing.
