Ingredients:

  • 4 cups (600g) fresh peaches, peeled and sliced
  • 1/2 cup (100g) light brown sugar, packed
  • 1 tbsp (8g) cornstarch
  • 1/2 tsp (1g) ground cinnamon
  • 1 tbsp (15ml) lemon juice
  • 1 cup (125g) all-purpose flour
  • 3/4 cup (150g) light brown sugar, packed
  • 2 tsp (10g) baking powder
  • 1/2 tsp (3g) salt
  • 1 cup (240ml) whole milk
  • 1/4 cup (55g) unsalted butter, melted
  • 1 tsp (5ml) vanilla extract

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss sliced peaches with 1/2 cup brown sugar, cornstarch, cinnamon, and lemon juice until coated in syrup.
  3. Pour the peach mixture into a 9x9-inch baking dish and spread evenly.
  4. In the same bowl, whisk together flour, 3/4 cup brown sugar, baking powder, and salt.
  5. Stir in the milk, melted butter, and vanilla extract until just combined.
  6. Pour the batter evenly over the peaches without stirring the layers together.
  7. Bake for 35–40 minutes until the edges bubble and the topping is a deep mahogany gold.
