Ingredients:
- 4 cups (600g) fresh peaches, peeled and sliced
- 1/2 cup (100g) light brown sugar, packed
- 1 tbsp (8g) cornstarch
- 1/2 tsp (1g) ground cinnamon
- 1 tbsp (15ml) lemon juice
- 1 cup (125g) all-purpose flour
- 3/4 cup (150g) light brown sugar, packed
- 2 tsp (10g) baking powder
- 1/2 tsp (3g) salt
- 1 cup (240ml) whole milk
- 1/4 cup (55g) unsalted butter, melted
- 1 tsp (5ml) vanilla extract
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss sliced peaches with 1/2 cup brown sugar, cornstarch, cinnamon, and lemon juice until coated in syrup.
- Pour the peach mixture into a 9x9-inch baking dish and spread evenly.
- In the same bowl, whisk together flour, 3/4 cup brown sugar, baking powder, and salt.
- Stir in the milk, melted butter, and vanilla extract until just combined.
- Pour the batter evenly over the peaches without stirring the layers together.
- Bake for 35–40 minutes until the edges bubble and the topping is a deep mahogany gold.
