Ingredients:
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 pound ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 4 all-beef hot dogs
- 4 soft hot dog buns
- 1 cup shredded cheddar cheese
- Pickled jalapeños (optional)
- Chopped green onions (optional)
Instructions:
- Heat olive oil in the pot over medium heat. Add diced onion and cook until translucent (about 5 minutes). Stir in minced garlic and sauté for an additional minute.
- Add ground beef to the pot. Cook until browned, breaking it up with the wooden spoon (about 5–7 minutes). Drain excess fat, if necessary.
- Stir in kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer, then reduce heat and allow to cook for 30 minutes, stirring occasionally.
- Preheat the grill or grill pan. Grill hot dogs until charred and heated through (about 5–7 minutes).
- Place grilled hot dogs into buns. Top with a generous serving of chili and sprinkle with shredded cheese. Add optional toppings of jalapeños and green onions.
