Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 all-beef hot dogs
  • 4 soft hot dog buns
  • 1 cup shredded cheddar cheese
  • Pickled jalapeños (optional)
  • Chopped green onions (optional)

Instructions:

  1. Heat olive oil in the pot over medium heat. Add diced onion and cook until translucent (about 5 minutes). Stir in minced garlic and sauté for an additional minute.
  2. Add ground beef to the pot. Cook until browned, breaking it up with the wooden spoon (about 5–7 minutes). Drain excess fat, if necessary.
  3. Stir in kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer, then reduce heat and allow to cook for 30 minutes, stirring occasionally.
  4. Preheat the grill or grill pan. Grill hot dogs until charred and heated through (about 5–7 minutes).
  5. Place grilled hot dogs into buns. Top with a generous serving of chili and sprinkle with shredded cheese. Add optional toppings of jalapeños and green onions.
