- 4 medium zucchini, trimmed and halved lengthwise
- 1 Tbsp olive oil (for brushing)
- Kosher Salt & Black Pepper, to taste
- 1 lb large shrimp (21/25 count), peeled and deveined
- 2 tsp Cajun Seasoning Blend
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1 Tbsp unsalted butter, melted
- 1 Tbsp fresh parsley, chopped (for garnish)
- 1 tsp fresh lemon juice (for finishing)
Instructions:
- Prep the Zucchini Boats: Halve the zucchini lengthwise. Use a small spoon or melon baller to carefully scoop out the watery seeds and flesh, leaving about 1/4 inch thickness for structure. Lightly brush the insides with olive oil and season with salt and pepper.
- Prepare the Cajun Shrimp Marinade: In a small bowl, toss the peeled and deveined shrimp with the Cajun seasoning, garlic powder, smoked paprika, and melted butter. Ensure the shrimp are evenly coated.
- Assemble: Arrange the zucchini boats cut-side up on the air fryer basket or a shallow, air-fryer-safe tray. Carefully fill each zucchini boat cavity with the seasoned shrimp, packing them snugly.
- Air Fry: Preheat the air fryer to 390°F (200°C). Place the loaded zucchini boats inside, ensuring they are not overcrowded (cook in batches if necessary).
- Cook: Air fry for 8 to 10 minutes, flipping halfway through if necessary, until the shrimp are pink, opaque, and cooked through, and the zucchini is tender-crisp.
- Finish and Serve: Remove immediately from the air fryer. Drizzle with fresh lemon juice and garnish generously with chopped parsley. Serve hot.
