Ingredients:

  • 435g all-purpose flour
  • 50g granulated sugar
  • 7g instant yeast
  • 240ml warm water
  • 112g unsalted butter, divided (56g melted for dough, 56g softened for filling)
  • 5g fine sea salt
  • 150g brown sugar, packed
  • 15g ground cinnamon
  • 115g cream cheese, softened
  • 125g powdered sugar
  • 30ml whole milk
  • 5ml vanilla extract

Instructions:

  1. In a large bowl, combine 435g all-purpose flour, 50g granulated sugar, 7g instant yeast, and 5g salt.
  2. Add 240ml warm water and 56g melted butter.
  3. Knead the mixture on a clean surface for 5-7 mins until it feels smooth and elastic.
  4. Place it in a greased bowl, cover with a damp cloth, and set it near (not on) the fire for 1 hour until doubled in size.
  5. Flatten the dough into a 12x18 inch rectangle.
  6. Smear 56g softened butter over the dough, then sprinkle 150g brown sugar mixed with 15g cinnamon.
  7. Roll tightly from the long side and cut into 8 even pieces using unflavored dental floss or a sharp knife.
  8. Grease your Dutch oven and place the rolls inside, leaving about 2cm between them.
  9. Place the Dutch oven on a small pile of coals (about 5-8 coals) and put 15-20 coals on the lid.
  10. Bake for 25 mins until the tops are mahogany brown and the centers spring back.
  11. Whisk 115g cream cheese, 125g powdered sugar, 30ml milk, and 5ml vanilla until velvety and pourable. Drizzle over the warm rolls.
