Ingredients:
- 2 (5 ounce/140g) cans canned chicken, drained well
- 1/2 cup (113g) mayonnaise (full-fat or light)
- 1/4 cup (30g) celery, finely diced
- 1/4 cup (30g) red onion, finely diced
- 2 tablespoons (30ml) fresh lemon juice
- 1 tablespoon (15g) Dijon mustard
- 1/4 teaspoon (1g) black pepper, freshly ground
- 1/4 teaspoon (1.5g) salt, or to taste
- 2 tablespoons (15g) chopped fresh parsley, for garnish (optional)
Instructions:
- Open the cans of chicken and drain them thoroughly, pressing out any excess liquid. Flake the chicken with a fork in a mixing bowl.
- Dice the celery and red onion into small, uniform pieces.
- Add the mayonnaise, celery, red onion, lemon juice, Dijon mustard, salt, and pepper to the bowl with the flaked chicken.
- Gently stir all ingredients until well combined. Be careful not to overmix.
- Taste and adjust seasoning as needed. Add more salt, pepper, or lemon juice to your preference.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld (optional).
- Before serving, garnish with chopped fresh parsley (if using).
