Ingredients:

  • 2 (5 ounce/140g) cans canned chicken, drained well
  • 1/2 cup (113g) mayonnaise (full-fat or light)
  • 1/4 cup (30g) celery, finely diced
  • 1/4 cup (30g) red onion, finely diced
  • 2 tablespoons (30ml) fresh lemon juice
  • 1 tablespoon (15g) Dijon mustard
  • 1/4 teaspoon (1g) black pepper, freshly ground
  • 1/4 teaspoon (1.5g) salt, or to taste
  • 2 tablespoons (15g) chopped fresh parsley, for garnish (optional)

Instructions:

  1. Open the cans of chicken and drain them thoroughly, pressing out any excess liquid. Flake the chicken with a fork in a mixing bowl.
  2. Dice the celery and red onion into small, uniform pieces.
  3. Add the mayonnaise, celery, red onion, lemon juice, Dijon mustard, salt, and pepper to the bowl with the flaked chicken.
  4. Gently stir all ingredients until well combined. Be careful not to overmix.
  5. Taste and adjust seasoning as needed. Add more salt, pepper, or lemon juice to your preference.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld (optional).
  7. Before serving, garnish with chopped fresh parsley (if using).
