Instructions:
- Wash and dry the apples thoroughly. Core them and slice them thinly, about 1/8 inch (3mm) thick. Keep the skin on.
- Place the sliced apples into a medium bowl. Drizzle with the fresh lemon juice and gently toss to coat. This prevents browning.
- In a separate small bowl, combine the Greek yogurt, maple syrup, vanilla extract, and salt. Whisk vigorously until completely smooth.
- If desired, warm the yogurt-caramel sauce mixture in a small saucepan over very low heat for 2-3 minutes, stirring constantly (do not boil).
- Arrange the apple slices attractively on a large serving platter, overlapping them slightly.
- Drizzle the prepared yogurt-caramel sauce generously over the apple slices.
- Immediately sprinkle the chocolate chips, chopped nuts, and toasted coconut (if using) evenly over the entire platter.
- Finish with a light dusting of ground cinnamon and serve the Apple Nachos immediately while the apples are at their crispest.
