Ingredients:

  • 4 large ripe peaches, sliced into wedges (approx. 900g)
  • 1 tbsp fresh lemon juice
  • 4 tbsp unsalted butter
  • 1/2 cup packed light brown sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt

Instructions:

  1. Toss the sliced peaches with the lemon juice in a bowl to prevent oxidation and add acidity.
  2. Place a skillet over medium heat and melt the butter until it begins to foam. Stir in the brown sugar, cinnamon, and salt; whisk constantly for 1-2 minutes until the mixture becomes a thick, bubbling syrup.
  3. Carefully place the peach wedges into the skillet in a single layer. Cook for 3-4 minutes per side without stirring too often until a mahogany-colored crust forms.
  4. Spoon the remaining syrup from the pan over the peaches and remove from heat immediately to prevent the sugar from burning.
