Ingredients:

  • 1/2 cup (100g) popcorn kernels
  • 2 tablespoons (30ml) vegetable oil
  • 1/4 cup (30g) unsalted butter
  • 1/4 cup (30g) all-purpose flour
  • 1 cup (240ml) whole milk
  • 2 cups (200g) shredded sharp cheddar cheese, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika (optional)

Instructions:

  1. Heat oil in a large pot over medium-high heat. Add popcorn kernels in a single layer. Cover and cook, shaking occasionally, until popping slows. Remove from heat, let sit 1 minute, transfer to a large bowl.
  2. In the same pot, melt butter over medium heat. Whisk in flour until smooth (forms a roux).
  3. Gradually whisk in milk until smooth and thickened. Bring to a simmer, stirring constantly.
  4. Reduce heat to low. Add 1 1/2 cups of shredded cheddar cheese, salt, and paprika (if using). Stir until the cheese is completely melted and the sauce is smooth.
  5. Pour the cheese sauce over the popcorn in the bowl. Gently toss to coat evenly.
