Ingredients:
- 1/2 cup (100g) popcorn kernels
- 2 tablespoons (30ml) vegetable oil
- 1/4 cup (30g) unsalted butter
- 1/4 cup (30g) all-purpose flour
- 1 cup (240ml) whole milk
- 2 cups (200g) shredded sharp cheddar cheese, divided
- 1/4 teaspoon salt
- 1/4 teaspoon paprika (optional)
Instructions:
- Heat oil in a large pot over medium-high heat. Add popcorn kernels in a single layer. Cover and cook, shaking occasionally, until popping slows. Remove from heat, let sit 1 minute, transfer to a large bowl.
- In the same pot, melt butter over medium heat. Whisk in flour until smooth (forms a roux).
- Gradually whisk in milk until smooth and thickened. Bring to a simmer, stirring constantly.
- Reduce heat to low. Add 1 1/2 cups of shredded cheddar cheese, salt, and paprika (if using). Stir until the cheese is completely melted and the sauce is smooth.
- Pour the cheese sauce over the popcorn in the bowl. Gently toss to coat evenly.
