Ingredients:

  • 5 lbs Ground Beef (80/20 blend)
  • 1 tsp Kosher Salt
  • ½ tsp Black Pepper, freshly ground
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • 4 slices American Cheese (or sharp Cheddar)
  • ½ cup Mayonnaise
  • 2 Tbsp Ketchup
  • 1 Tbsp Yellow Mustard
  • 1 Tbsp Sweet Pickle Relish (or finely minced dill pickle)
  • 1 tsp White Vinegar
  • Pinch of Salt and Pepper (for sauce)
  • 4 large (10-12 inch) Flour Tortillas
  • 1 cup Crushed Tortilla Chips (plain salted)
  • ½ cup Shredded Iceberg Lettuce
  • ¼ cup Finely Diced White Onion
  • 8 thin slices Dill Pickles
  • 4 small (6-inch) Soft Taco-sized Tortillas
  • 1 Tbsp Vegetable Oil or Butter (for pan-grilling)

Instructions:

  1. Make the Sauce: Whisk all Secret Sauce ingredients (Mayonnaise, Ketchup, Mustard, Relish, Vinegar, Salt/Pepper) together until fully combined. Refrigerate.
  2. Prepare the Beef: Gently mix the ground beef with salt, pepper, onion powder, and garlic powder. Do not overwork. Divide into 4 equal portions and shape them into thin patties, slightly wider than the large tortillas.
  3. Form Patties: Create a small divot in the centre of each patty. Crush the tortilla chips into medium-fine crumbs and set aside.
  4. Cook Patties: Heat skillet over medium-high heat with a touch of oil. Cook patties for 3-4 minutes per side until browned. During the last minute, top each patty with one slice of cheese and remove from heat.
  5. Lay the Foundation: Lay one large tortilla flat. Lightly brush the centre with a spoonful of Secret Sauce.
  6. Build the Core: Place one small taco tortilla over the sauce in the centre. Place one cheesy patty centrally on the small tortilla, top with 2 pickle slices, then sprinkle with crushed tortilla chips, lettuce, and onion. Drizzle with more sauce.
  7. The Fold (Crucial Step): Starting at one edge, fold the large tortilla edge up over the fillings. Pleat and fold the edges tightly around the central filling, rotating the wrap 90 degrees with each fold until the entire disc is sealed into a neat, flat package.
  8. Grill: Heat the remaining oil/butter in the skillet over medium heat. Carefully place the sealed Cheeseburger Crunch Wraps seam-side down onto the hot pan.
  9. Toast: Cook for 2-3 minutes until deeply golden brown and crisp. Flip and cook the other side until equally golden. Slice each wrap in half diagonally and serve immediately.
