  • 0.25 cup brown sugar, packed
  • 1 tsp pumpkin pie spice
  • 1 large egg

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Combine graham cracker crumbs, 1/4 cup granulated sugar, and melted butter in a bowl until the texture resembles wet sand.
  3. Press the mixture firmly into the bottom of the pan using the back of a spoon and bake for 8 minutes until edges are mahogany-colored; remove and let cool slightly.
  4. Beat softened cream cheese and 1/2 cup granulated sugar on medium-high until smooth and fluffy.
  5. Mix in vanilla extract and one egg, beating only until combined to avoid introducing too much air.
  6. Spread half of the plain cheesecake batter evenly over the pre-baked crust.
  7. In a separate bowl, whisk together pumpkin puree, brown sugar, and pumpkin pie spice until smooth.
  8. Stir in the second egg until fully incorporated.
  9. Fold the pumpkin mixture into the remaining half of the plain cheesecake batter, spread over the base, and use a toothpick or skewer to create a swirl pattern.
  10. Bake for the remaining time until set, then chill in the refrigerator for 3 hours before slicing into 16 bars.
