Ingredients:
- 1 lb (450g) ground beef
- 1 medium yellow onion, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce/425g) can tomato sauce
- 1 (1.25 ounce/35g) package taco seasoning
- 1/2 cup (120ml) water
- 1 (28 ounce/794g) bag frozen French fries (straight-cut or crinkle-cut)
- 2 cups (225g) shredded cheddar cheese
- 1/2 cup (120ml) sour cream (for topping, optional)
- 1/4 cup (optional) chopped green onions (for topping, optional)
Instructions:
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium heat. Drain off any excess grease.
- Add chopped onion and green bell pepper to the skillet and sauté until softened, about 5 minutes.
- Stir in tomato sauce, taco seasoning, and water. Bring to a simmer and cook for 5 minutes.
- Spread a layer of French fries in the bottom of the baking dish. Top with half of the beef mixture, then half of the shredded cheddar cheese. Repeat layers with remaining fries, beef mixture, and cheese.
- Bake in the preheated oven for 25-30 minutes, or until cheese is melted and bubbly and the casserole is heated through.
- Top with sour cream and chopped green onions before serving.
