Ingredients:

  • 3 cups (240g) rolled oats (not instant)
  • 1 cup (100g) shredded unsweetened coconut
  • 1/2 cup (75g) ground flaxseed meal
  • 1/2 cup (50g) mini chocolate chips
  • 1/4 teaspoon (1g) sea salt
  • 1 cup (250g) creamy peanut butter (natural or regular)
  • 1/2 cup (170g) honey
  • 1 teaspoon (5ml) vanilla extract

Instructions:

  1. In a large bowl, mix together the oats, coconut, flaxseed meal, chocolate chips, and salt.
  2. In a separate bowl, stir together the peanut butter, honey, and vanilla extract until smooth and well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until everything is evenly coated. The mixture will be quite thick.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
  5. Using your hands, roll the mixture into 1-inch (2.5 cm) balls.
  6. Place the energy bites on a baking sheet or plate lined with parchment paper. Refrigerate for another 15 minutes for an even firmer texture, or serve immediately.
