Ingredients:
- 3 cups (240g) rolled oats (not instant)
- 1 cup (100g) shredded unsweetened coconut
- 1/2 cup (75g) ground flaxseed meal
- 1/2 cup (50g) mini chocolate chips
- 1/4 teaspoon (1g) sea salt
- 1 cup (250g) creamy peanut butter (natural or regular)
- 1/2 cup (170g) honey
- 1 teaspoon (5ml) vanilla extract
Instructions:
- In a large bowl, mix together the oats, coconut, flaxseed meal, chocolate chips, and salt.
- In a separate bowl, stir together the peanut butter, honey, and vanilla extract until smooth and well combined.
- Pour the wet ingredients into the dry ingredients and stir until everything is evenly coated. The mixture will be quite thick.
- Cover the bowl and refrigerate for at least 30 minutes to allow the mixture to firm up.
- Using your hands, roll the mixture into 1-inch (2.5 cm) balls.
- Place the energy bites on a baking sheet or plate lined with parchment paper. Refrigerate for another 15 minutes for an even firmer texture, or serve immediately.
