Ingredients:
- 1 cup buttermilk (240ml)
- 1 tablespoon pickle juice (15ml)
- 1 teaspoon garlic powder (5g)
- 1 teaspoon onion powder (5g)
- 1 lb (450g) boneless, skinless chicken breasts (4 pieces)
- 1 cup all-purpose flour (120g)
- 1 teaspoon paprika (5g)
- 1 teaspoon salt (5g)
- ½ teaspoon black pepper (2.5g)
- ½ teaspoon baking powder (2g)
- Oil for frying (canola or peanut oil, approx. 2 cups or 500ml)
- 4 soft burger buns
- 4 slices of dill pickle
- Optional: Sliced tomatoes, lettuce, and sauces such as mayonnaise or Chick-fil-A sauce
Instructions:
- In a shallow bowl, combine buttermilk, pickle juice, garlic powder, and onion powder.
- Add chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour.
- In a large bowl, whisk together flour, paprika, salt, pepper, and baking powder.
- Remove chicken from the marinade and let excess drip off. Dredge the chicken pieces in the flour mixture until completely coated, shaking off excess.
- In a heavy-bottomed pot or deep fryer, heat oil to 350°F (175°C). Use a thermometer for accuracy.
- Carefully lower chicken into hot oil, frying in batches if necessary. Cook until golden brown and internal temperature reaches 165°F (75°C), about 3-4 minutes per side.
- Toast the burger buns if desired. Place a fried chicken fillet on each bun, add pickles, and any optional toppings.
