Ingredients:

  • 1 cup buttermilk (240ml)
  • 1 tablespoon pickle juice (15ml)
  • 1 teaspoon garlic powder (5g)
  • 1 teaspoon onion powder (5g)
  • 1 lb (450g) boneless, skinless chicken breasts (4 pieces)
  • 1 cup all-purpose flour (120g)
  • 1 teaspoon paprika (5g)
  • 1 teaspoon salt (5g)
  • ½ teaspoon black pepper (2.5g)
  • ½ teaspoon baking powder (2g)
  • Oil for frying (canola or peanut oil, approx. 2 cups or 500ml)
  • 4 soft burger buns
  • 4 slices of dill pickle
  • Optional: Sliced tomatoes, lettuce, and sauces such as mayonnaise or Chick-fil-A sauce

Instructions:

  1. In a shallow bowl, combine buttermilk, pickle juice, garlic powder, and onion powder.
  2. Add chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour.
  3. In a large bowl, whisk together flour, paprika, salt, pepper, and baking powder.
  4. Remove chicken from the marinade and let excess drip off. Dredge the chicken pieces in the flour mixture until completely coated, shaking off excess.
  5. In a heavy-bottomed pot or deep fryer, heat oil to 350°F (175°C). Use a thermometer for accuracy.
  6. Carefully lower chicken into hot oil, frying in batches if necessary. Cook until golden brown and internal temperature reaches 165°F (75°C), about 3-4 minutes per side.
  7. Toast the burger buns if desired. Place a fried chicken fillet on each bun, add pickles, and any optional toppings.
  8. Enjoy hot and fresh, with your favorite sides!
