Instructions:
- In a mixing bowl, whisk together the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and sea salt until well combined.
- Let the mixture sit for 5 minutes to allow the chia seeds to begin absorbing the liquid.
- Give the pudding another thorough whisk to break up any clumps of chia seeds.
- Transfer the mixture into serving containers and refrigerate for at least 30 minutes, or until it reaches a pudding-like consistency.
- While the pudding is chilling, prepare your choice of fruit and toppings.
- Once thickened, remove from the fridge, top with fresh fruit, shredded coconut, and nuts, and enjoy!
