  • Unsweetened shredded coconut - optional
  • Chopped nuts (almonds or pistachios) - optional

Instructions:

  1. In a mixing bowl, whisk together the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and sea salt until well combined.
  2. Let the mixture sit for 5 minutes to allow the chia seeds to begin absorbing the liquid.
  3. Give the pudding another thorough whisk to break up any clumps of chia seeds.
  4. Transfer the mixture into serving containers and refrigerate for at least 30 minutes, or until it reaches a pudding-like consistency.
  5. While the pudding is chilling, prepare your choice of fruit and toppings.
  6. Once thickened, remove from the fridge, top with fresh fruit, shredded coconut, and nuts, and enjoy!
