Ingredients:

  • 1 cup (120g) graham cracker crumbs
  • 3 tablespoons (40g) unsalted butter, melted
  • 8 ounces (226g) fresh goat cheese, softened
  • ½ cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) heavy cream
  • ½ cup (120ml) honey
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • Fresh berries for garnish (optional)

Instructions:

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Mix until well blended. Press the mixture firmly into the bottom of the springform pan. Bake for 10 minutes until golden. Let cool.
  2. In a mixing bowl, whisk together softened goat cheese and sugar until creamy. Add vanilla extract and continue to mix until fully incorporated. In a separate bowl, whip heavy cream until soft peaks form. Gently fold the whipped cream into the goat cheese mixture until smooth and combined.
  3. Pour the goat cheese filling over the cooled crust, smoothing the top with a spatula. Cover and refrigerate for at least 4 hours, or until set.
  4. In a small saucepan, combine honey, lemon juice, and lemon zest. Heat gently until warm and mixed. Remove from heat and let cool slightly.
  5. Once set, remove the dessert from the springform pan. Drizzle with lemon-honey topping and garnish with fresh berries if desired.
