Ingredients:
- 1 cup (120g) graham cracker crumbs
- 3 tablespoons (40g) unsalted butter, melted
- 8 ounces (226g) fresh goat cheese, softened
- ½ cup (100g) granulated sugar
- 1 teaspoon vanilla extract
- 1 cup (240ml) heavy cream
- ½ cup (120ml) honey
- 1 tablespoon fresh lemon juice
- Zest of 1 lemon
- Fresh berries for garnish (optional)
Instructions:
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Mix until well blended. Press the mixture firmly into the bottom of the springform pan. Bake for 10 minutes until golden. Let cool.
- In a mixing bowl, whisk together softened goat cheese and sugar until creamy. Add vanilla extract and continue to mix until fully incorporated. In a separate bowl, whip heavy cream until soft peaks form. Gently fold the whipped cream into the goat cheese mixture until smooth and combined.
- Pour the goat cheese filling over the cooled crust, smoothing the top with a spatula. Cover and refrigerate for at least 4 hours, or until set.
- In a small saucepan, combine honey, lemon juice, and lemon zest. Heat gently until warm and mixed. Remove from heat and let cool slightly.
- Once set, remove the dessert from the springform pan. Drizzle with lemon-honey topping and garnish with fresh berries if desired.
