Ingredients:

  • 2 ripe avocados (approx. 1 lb / 450g), pitted and peeled
  • 1/2 cup (120ml) pure maple syrup
  • 1/2 cup (60g) unsweetened dark cocoa powder
  • 2 large eggs (approx. 100g)
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) fine sea salt
  • 1 tsp (5g) flaky sea salt
  • 1/2 cup (60g) dark chocolate chips

Instructions:

  1. Place the scooped avocado, maple syrup, cocoa powder, eggs, vanilla, baking soda, and fine salt into a food processor. Blend on high for 1–2 minutes until the mixture is completely smooth and mahogany-colored, with no green streaks remaining.
  2. Fold in the dark chocolate chips by hand using a silicone spatula.
  3. Line an 8x8 inch baking pan with parchment paper. Pour the batter into the pan and smooth the top with a spatula.
  4. Bake at 350°F (175°C) for 22–25 minutes until the edges are slightly firm and pulling away from the sides, while the center remains slightly soft.
  5. Remove from the oven and immediately sprinkle the flaky sea salt over the top.
  6. Let the brownies cool completely in the pan for at least 30 minutes to allow the fats to set.
