Ingredients:
- 2 ripe avocados (approx. 1 lb / 450g), pitted and peeled
- 1/2 cup (120ml) pure maple syrup
- 1/2 cup (60g) unsweetened dark cocoa powder
- 2 large eggs (approx. 100g)
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) fine sea salt
- 1 tsp (5g) flaky sea salt
- 1/2 cup (60g) dark chocolate chips
Instructions:
- Place the scooped avocado, maple syrup, cocoa powder, eggs, vanilla, baking soda, and fine salt into a food processor. Blend on high for 1–2 minutes until the mixture is completely smooth and mahogany-colored, with no green streaks remaining.
- Fold in the dark chocolate chips by hand using a silicone spatula.
- Line an 8x8 inch baking pan with parchment paper. Pour the batter into the pan and smooth the top with a spatula.
- Bake at 350°F (175°C) for 22–25 minutes until the edges are slightly firm and pulling away from the sides, while the center remains slightly soft.
- Remove from the oven and immediately sprinkle the flaky sea salt over the top.
- Let the brownies cool completely in the pan for at least 30 minutes to allow the fats to set.
