Ingredients:

  • 8 oz Triple Cream Brie
  • 6 oz Aged Sharp Cheddar
  • 6 oz Gorgonzola Dolce
  • 6 oz Manchego
  • 4 oz Dark Chocolate (70% cocoa)
  • 4 oz Milk Chocolate
  • 4 oz White Chocolate
  • 3 oz Dark Chocolate Truffles
  • 1 cup Dried Apricots
  • 1 cup Fresh Raspberries
  • 1/2 cup Roasted Salted Almonds
  • 1/4 cup Honey
  • 1/2 cup Pretzel twists

Instructions:

  1. Remove all cheeses from the refrigerator 60 minutes before assembly to allow fats to soften and aromatic compounds to release.
  2. Place small ceramic ramekins on the wooden board to create anchor points for the honey and nuts.
  3. Position the cheeses in a diagonal line across the board, placing the Triple Cream Brie in the center as the visual focal point.
  4. Cluster the broken chocolate shards, squares, and chunks around the cheeses, pairing dark chocolate near the aged blue cheese and white chocolate near the goat or brie.
  5. Fill the remaining gaps with dried apricots, fresh berries, salted almonds, and pretzel twists to balance sweetness with salt and acidity.
  6. Drizzle honey over the board or place it in a ramekin for dipping.
