Ingredients:
- 2 cups (250g) finely diced Bosc or Anjou pears
- 1 tbsp (15g) unsalted butter
- ½ tsp (1g) ground cinnamon
- 1 cup (225g) unsalted butter, browned and cooled
- ¾ cup (150g) packed light brown sugar
- ½ cup (100g) granulated white sugar
- 1 large (50g) egg, room temperature
- 1 large (18g) egg yolk, room temperature
- 1 tsp (5ml) pure vanilla extract
- 2 ¼ cups (280g) all-purpose flour
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 cup (170g) dark chocolate chips
Instructions:
- Place the diced pears and 1 tbsp of butter in a skillet over medium heat. Sprinkle with cinnamon and sauté for 5–7 minutes until the pears are tender and the liquid has mostly evaporated. Remove from heat and let cool completely.
- Melt 1 cup of butter in a saucepan over medium heat, whisking constantly. Once it foams and smells nutty with small brown bits at the bottom, remove from heat immediately and let cool for 10 minutes.
- In a large bowl, cream the cooled browned butter with the light brown sugar and granulated white sugar until smooth and fluffy.
- Beat in the egg and egg yolk one at a time, then stir in the vanilla extract until well emulsified.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Gently fold in the cooled sautéed pears and the dark chocolate chips.
- Scoop rounded tablespoons of dough onto baking sheets lined with parchment paper.
- Bake for 12-15 minutes or until the edges are golden brown. Allow to cool on the pan for 5 minutes before transferring to a wire rack.
